This recipe is perfect for Christmas dinner. Can be made ahead and frozen, then reheated. This recipe is from Moose’s family cookbook, “That Tastes Like Home”. Today’s recipe: Broccoli Casserole


  • 2 packages frozen broccoli
  • ½ lb. Velveeta cheese or cheese whiz
  • 1 cup old cheddar (can add Imperial nippy cheese if desired)
  • ½ cup milk
  • ¼ cup margarine
  • 1 small onion, chopped
  • 25 Ritz crackers – crushed for topping
  • ¼ cup margarine – melted for topping


  • Steam broccoli until tender, but slightly firm
  • Sauté the onions until translucent
  • Melt cheese and ¼ cup margarine over low heat, add milk when melted
  • Add cheese mix & onions to broccoli & place in medium casserole dish
  • Mix crushed crackers with ¼ cup melted margarine and spread evenly over top of broccoli cheese mix
  • Bake at 350º F until hot and brown on top


  • Add Frank’s Red Hot or Tabasco sauce for some heat
  • Add some Mrs. Dash for additional flavour
