This recipe is perfect for Christmas dinner. Can be made ahead and frozen, then reheated. This recipe is from Moose’s family cookbook, “That Tastes Like Home”. Today’s recipe: Broccoli Casserole
Ingredients
- 2 packages frozen broccoli
- ½ lb. Velveeta cheese or cheese whiz
- 1 cup old cheddar (can add Imperial nippy cheese if desired)
- ½ cup milk
- ¼ cup margarine
- 1 small onion, chopped
- 25 Ritz crackers – crushed for topping
- ¼ cup margarine – melted for topping
Directions
- Steam broccoli until tender, but slightly firm
- Sauté the onions until translucent
- Melt cheese and ¼ cup margarine over low heat, add milk when melted
- Add cheese mix & onions to broccoli & place in medium casserole dish
- Mix crushed crackers with ¼ cup melted margarine and spread evenly over top of broccoli cheese mix
- Bake at 350º F until hot and brown on top
Options
- Add Frank’s Red Hot or Tabasco sauce for some heat
- Add some Mrs. Dash for additional flavour
